Dough Mix:
- 2 Cups Flour*
- 0.75 Cup of water
- 1 teaspoon of salt
- 0.75 teaspoon of instant dry yeast
- 2 tablespoons of milk powder
- 1 tablespoon of sugar
- 1 tablespoon of unsalted butter
- 1 beaten egg [optional, helps raise better?]
* Flour is ideally 11-13% protein. It can be a mix of bread and cake flour to reach this level.
Steps:
- Mix (15-20 minutes with mixer)
- Rest (30 minutes – 60 minutes: until size doubles)
- Shape into triangles (above recipe makes 6)
- Rest 15 minutes
- Roll into triangle with button inside (0.5 to 1 tablespoon each)
- Preheat Oven at 450F (230C)
- Add water pan to oven for steam (helps browning)
- Spray dough with water and sprinkle Salt
- Bake for 10-15 minutes
