Salt Bread (Shio Pan)

Dough Mix:

  • 2 Cups Flour*
  • 0.75 Cup of water
  • 1 teaspoon of salt
  • 0.75 teaspoon of instant dry yeast
  • 2 tablespoons of milk powder
  • 1 tablespoon of sugar
  • 1 tablespoon of unsalted butter
  • 1 beaten egg [optional, helps raise better?]

* Flour is ideally 11-13% protein. It can be a mix of bread and cake flour to reach this level.

Steps:

  1. Mix (15-20 minutes with mixer)
  2. Rest (30 minutes – 60 minutes: until size doubles)
  3. Shape into triangles (above recipe makes 6)
  4. Rest 15 minutes
  5. Roll into triangle with button inside (0.5 to 1 tablespoon each)
  6. Preheat Oven at 450F (230C)
  7. Add water pan to oven for steam (helps browning)
  8. Spray dough with water and sprinkle Salt
  9. Bake for 10-15 minutes
