Poached Shrimp

Ingredients

  • Water
  • Shrimp

Basic Steps

  1. Put frozen shrimp in a pot of water
  2. On low heat, heat till water reaches 170F (76C)
  3. Rinse with cold water

You can eat as it is.

Over-cooking to 185F does not significantly impact the taste or texture.

Bonus Steps

  1. Peel shrimp
  2. Sear in pan for 5 seconds a side with: Salt, Black Pepper, White Pepper, Terragon Flakes

Failure Modes

  • Under-cooking at about 165F makes a mushy texture and fishy aroma.
    • Consider soaking for 2-3 minutes at 170F to be sure.
    • Searing for 10 seconds will fix the issue.
