- Skinless Tilapia Fillet
Basic Steps
- Remove packaging
- Heat fillet in a pot of water (from frozen) till 140F/60C
- Sear in oil for 10-60 seconds, season with salt and pepper while searing
Note that this is 30F lower than shrimp.
To Verify
Test to see this works with cod and halibut
Failure Mode
- Heating to beyond 140F while in water will result in the meat breaking apart, and end up with slightly dry texture. In contrast, somehow, searing for a bit longer than expected is fine (not true for Shrimp).
