Poached Tilapia

Ingredients

  • Skinless Tilapia Fillet

Basic Steps

  1. Remove packaging
  2. Heat fillet in a pot of water (from frozen) till 140F/60C
  3. Sear in oil for 10-60 seconds, season with salt and pepper while searing

Note that this is 30F lower than shrimp.

Test to see this works with cod and halibut

Failure Mode

  • Heating to beyond 140F while in water will result in the meat breaking apart, and end up with slightly dry texture. In contrast, somehow, searing for a bit longer than expected is fine (not true for Shrimp).
