Basic Steps
- Beat 2 eggs, cut 1 tablespoon of butter
- Season with salt / pepper
- Put eggs and butter in a cold non-stick pan
- Turn on low-heat and stir
It will usually take a 5-10 minutes for the egg to coagulate on low heat. We need to stir continuously to avoid the bottom part of the egg to solidify too quickly. If it is too slow, turn up the heat a little.
Bonus Steps
- Add milk or water while beating the eggs. It will be fluffier, but takes longer to coagulate.
- Season with some truffle powder after plating
Failure Mode
- If the egg turn up like regular fried egg (solid), the heat is too high.
